According to a traditional custom, the period from a year’s 19th solar term of the beginning of winter to the following year’s first solar term of the beginning of spring in the Chinese lunar calendar is the most suitable time for making yellow wine in the traditional way, and the period is also hailed as the “winter brewing” season.
