Yancheng has various kinds of seafood. Ji Hua, a specialist in seafood, introduced that Jiang Port, Dafeng Port, Huangsha Port, Binhai Port and ChenJia Port in Yancheng all produce a great number of seafood. "Yancheng is rich in yellow croaker, pomfret, mackerel, shrimp, crab, assorted clams and shellfish," said Ji.
The original flavor is the most important thing for seafood lovers because the simple cooking method can bring out the best flavor.
Boiled mantis shrimp
Boil some water in the pot with onion, ginger and salt. Put mantis shrimp and cooking wine. The shrimp are ready when the water is boiling.
Raw white shrimp in wine
Raw white shrimp in wine is a traditional cuisine in coastal Yancheng.
Cut shrimp claws, rinse the shrimp with cold water and have them drained. Add wine and salt for sterilization purpose. Put sugar, 50 grams of soy sauce, 5 grams of balsamic vinegar, preserved bean curd and sesame oil.
